Boxed mixes, a handy mainstay in grocery stores, are expanding in upscale and creative ways as producers explore outside the box for their newest baking mixes.
The baking section is seen by health food firms as the next logical step in growing their product lines. For instance, Wells Enterprises firm Halo Top, which makes healthier ice cream, just launched a range of baking mixes that come in both boxed and single-serve forms.
General Mills, Inc. will produce Halo Top Desserts, which include light cake mix in single-serve cups and light baking mixes like peanut butter chocolate chip cookies and fudge brownies. There are three flavours of the single-serve microwaveable light cake mix—chocolate, strawberry, and birthday cake—and each one has 170 calories.
The goal behind creating Halo Top was to create a reduced-calorie ice cream without sacrificing taste or enjoyment, according to brand manager Peter Gargula. “We’ve been developing new goods all the time to provide consumers with enjoyment they can feel good about. With Halo Top Desserts, we are thrilled to welcome our devoted followers into the baking section and provide them a reliable transition from cold to warm.
PB2, a company known for its powdered nut butters, introduced a range of baking mixes in October 2022. In addition to being gluten-free, vegan, and kosher, the PB2 Pantry baking ingredients are made with roasted peanut flour.
Traditional firms have also tried to draw in customers who are concerned about their health and wellness. According to Hometown Food Co., the iconic packaged brand Hungry Jack underwent a makeover in December 2022 to better align with contemporary consumer values.
The firm stated that the revamp included giving Hungry Jack’s packaging “a bolder and more modern design that signifies where the brand stands today.” Additionally, the pancake ingredients have been modified to remove any artificial flavours, colours, and preservatives.
Dan Anglemyer, Hungry Jack’s chief operations officer, stated, “Hungry Jack has been a Sunday staple for 70 years and this brand refresh meets our customers where they are today.” “Our place at the table for many years to come will be ensured by the more prominently featured’made without’ product benefits and the more modern packaging, which offers a greater shelf presence.”
Along with introducing a line of keto-friendly baking ingredients and a gluten-free pizza dough flour, The King Arthur Baking Co. is also hoping to grow its customer base. The keto mixes come in chocolate cake, yellow cake, all-purpose muffin, and pizza crust varieties. They are grain-free, gluten-free, and created with non-GMO certified ingredients. There are two grammes in each combination.

Among the other unconventional developments are new collaborations. Dolly Parton, a legend in country music, and Conagra Brands, Inc. teamed to create the Duncan Hines brand. In January 2022, the collaboration unveiled a range of two baking mixes with a Southern influence. However, four more products were added to the lineup in January 2023.
Baking mixes for Southern-style coconut cake, banana cake, caramel turtle brownies, buttermilk biscuits, sweet cornbread and fudgy brownies are now available in Duncan Hines’ Dolly Parton range.
According to Audrey Ingersoll, vice president of Sweet Treats at Conagra Brands, “Duncan Hines and IMG launched one of the most successful new innovations in baking in 2022 with Dolly’s partnership and incredible star power behind us.” “We are incredibly thrilled to advance this significant collaboration by introducing four additional baking mixes.”
