Gillian Hu, a third-generation food entrepreneur who currently resides in New York City and was raised in the southwest Chinese state of Yunnan, founded Moyu. Ms. Hu used to exercise as a competitive athlete and found Konjac, a wellness ingredient, to make recipes that satisfied her daily needs for micronutrients, protein, fat, and carbohydrates. Yunnan produces more than 40% of the konjac used worldwide, and it has a 2,000-year history connected to East Asian traditional foods and medicinal activities. The plant contains glucomannan, a soluble dietary fiber well-known for its capacity to draw water and solidify into a gel-like material. Because it requires less maintenance when cultivated under the proper conditions, konjac is often regarded as sustainable.

After realizing that konjac might be utilized for more healthful dishes than only Asian cuisine, Ms. Hu spent two years developing a special, proprietary Konjac Batter & Baking Mix in collaboration with leading authorities in food science and agriculture. The mix costs $13.69. It is vegan, free of the majority of allergies, and has 9 grams of protein and fiber in addition to no added sugar. Moyu claims that the Konjac Batter & Baking Mix can be used to make a range of goods, such as brownies, muffins, and pancakes, that can be customized to fit a variety of dietary requirements and flavor preferences, including high protein, low carb, vegan, and paleo, without the need for common baking ingredients like flour, sugar, or batter.

Moyu will also sell ready-to-eat superfood cakes that are high in protein, free of grains, and gluten in addition to Konjac Batter & Baking Mix. They are also created from eggs from pastures and have no additional sugar. The cakes are offered in three flavors: the Dali (Jujube Walnut Banana), the Yunnan (Cacao Reishi Mushroom), and the Kunming (Orange Blossom Goji). A fifty-gram mini-loaf costs $8.99, while a 200-gram loaf costs $28.99.
